Water rolls off for two reasons, not one

Most people know about the oil. Fewer people know that the oil is the smaller half of the story.

A duck has a preen gland — the uropygial gland — near the base of the tail. When a duck preens, it works a waxy secretion from that gland through its feathers with its bill. That coating helps, but on its own it would not keep a duck dry through a full day of diving.

The structure does most of the work

Each feather is built from a central shaft with barbs branching off it, and tiny hooked barbules branching off those. Zipped together, they form a surface with gaps far too small and too tightly interlocked for water droplets to push through. Water sits on top of that microscopic mesh as beads and rolls away.

Underneath the outer feathers sits a layer of down that traps air. That trapped air is both insulation and buoyancy — it is why a duck floats high on the surface rather than sitting low in the water.

Which is why preening is not vanity

When you watch a duck spend twenty minutes running its bill through its feathers, it is doing maintenance: re-zipping barbules that have come apart and redistributing oil. A duck that cannot preen properly gets waterlogged, and a waterlogged duck gets cold fast.

And why detergent in water is dangerous

Soaps and detergents break the surface tension that keeps droplets sitting on top of the feather mesh. This is exactly why cleaning oiled birds after a spill is such delicate work, and why ponds where ducks live should never be treated with detergent.
